Stems are an important part of the controls of your bike.
A stem is integral to getting the right position and fit on your bike.
A stem with a higher rise will give you a more upright riding position whilst a low rise stem will keep your riding position low and sleak, great for racing, not great if you have a bad back!
The length of a bike's stem also has effect on your riding position.
The longer the stem the more streched out you will become on the bike however, too long and your steering may become slow.
Stem strength also has a big impact on your riding.
For example, if you're into downhill mountain biking and have very wide bars fitted you'll need a stem with good stifness and minimal lateral movement.
